Apology Salad

I created this salad after of weekend of overindulgence to apologize to my body.

Ingredients:

  • Baby spinach

  • Fresh kale

  • Frozen peas, thawed

  • Fresh Broccoli

  • Chicken

  • Fat free feta

  • Balsamic vinaigrette

Instructions:

Marinate chicken in balsamic for 20 minutes, preheat oven to 350. Bake chicken for 30 minutes or until done.

Chop kale and broccoli.

Combine spinach, kale, and broccoli.

Sprinkle on chopped chicken, feta, and peas.

Top with balsamic.
