Curry Apple Crunch Salad

Ingredients:

  • 50/50 spring mix

  • Celery, chopped

  • Walnuts

  • Honey crisp apples, sliced

  • Goat cheese, crumbled

  • Chicken, one pound

  • Curry sauce

Instructions:

Slow cook the chicken in the curry sauce. (I use a crockpot on low heat for about four hours.)

After the chicken is cooked, let it cool, and shred it with two forks.

Create a bed of greens with your 50/50 spring mix.

Scoop shredded chicken on to bed of greens.

Sprinkle remaining ingredients (apples, goat cheese, walnuts, and celery) on top of salad.
